I love recipes, but have no clue what digestive biscuits are, nor single cream, nor whatever that sugar was. Sounds good though,, I am off to eat a Walker's lemon shortbread cookie with some coffee.

Single cream is just the thinnest pouring cream. Digestive biscuits are plain thin wholemeal type cookies...and demerera sugar is light brown sugar.

i was going to ask all the same things that sheila did, so i know it's not just me : )

i haven't been into cheesecake in about 5 or so years now, it's just too much, i think. now pie is okay. i love key lime pie, but it has to be real key limes, not the green ones. i buy the juice online.

I was curious about single cream, so I Googled it. It apparently is similar to half-and-half with about 10%-12% milk fat.

We use turbinado sugar more often than demerera in the US. Sugar in the Raw, Starbucks, sound familiar?

That sounds like the perfect summer dessert. I have a recipe for a lemon pudding cheesecake, but it's far more complicated than that.
That reminds me, I have to think of what I'm going to make for book group tomorrow night.
